I was craving warm, chewy chocolate chip goodness, so I decided to do some baking. The cookie recipe I grew up with produces cookies of the light and puffy variety, whereas I wanted thick and chewy and gooey with chocolate chunks. So online I went to search out the best recipe. I found Alton Brown&#8217;s <a href="http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_13617,00.html">Chewy Recipe</a>, and trusting that <a href="http://www.wired.com/wired/archive/12.06/cooking.html">this dude knows what he&#8217;s talking about in the kitchen</a>, I mixed up the dough.<span id="more-184"></span></p>
<p>What came out of my oven were the thinnest, crispiest chocolate chip cookies I&#8217;ve ever eaten in my life. If not for the chips themselves, they might almost be called lace cookies.  Now they&#8217;re still quite edible, mind you, but my fantasies of robust cookie goodness just weren&#8217;t fulfilled.</p>
<p>So I ask you:</p>
<p>1. Why the hell didn&#8217;t this recipe work?<br />
2. Do you have a foolproof recipe for chewy chocolate chip cookies?</p>

It seems like I&#8217;m meeting more and more people with wheat/gluten tolerance issues. Like the whole peanut allergy epidemic, it makes me wonder: what the hell is wrong with modern wheat, or has modern medicine just improved its ability to diagnose this particular problem?</p>
<p>I&#8217;m also wondering if this recipe can be easily modified for those of us who do eat wheat. That list of ingredients for gluten-free cookie dough is intimidating, and expensive. Yeah, sure, substitute regular flour for their mix of sorghum and xanthan gum, but would I also have to change the amounts of butter or sugar to maintain the consistency?</p>
